Blintze Souffle

DAIRY • YIELDS 6 SERVINGS • BY LYNNE PORITSKY

Success. This is always a lovely dish to serve at brunch or, of course, for Shavuot. Enjoy!

12 frozen cheese blintzes
½ stick margarine or butter
6 eggs
½ cup orange juice
1 cup sour cream
½ cup sugar
Cinnamon

  1. Preheat oven to 350°.
  2. Melt margarine or butter and pour over blintzes in a rectangular baking dish.
  3. In blender, mix eggs, orange juice, sour cream, and sugar.
  4. Pour mixture over blintzes and sprinkle with cinnamon.
  5. Bake at for one hour uncovered. Do not open over door.
